Ingredients
  

  • 2 pieces red bell peppers
  • 2 tablespoons butter
  • 1/2 large onion diced
  • 2 cloves garlic minced
  • 4 oz cream cheese
  • 3 tablespoons mayonnaise
  • to taste salt

Instructions
 

  • First, preheat your oven to broil. Take your red bell peppers and place them on a baking sheet. Make sure to arrange them so they are not touching, allowing them to roast evenly. Broil the peppers for about fifteen minutes. You'll want to keep an eye on them, turning them occasionally to achieve a nice char on all sides. The skin should start to blister and turn black, which is exactly what you're looking for.
  • Once the peppers are nicely charred, remove them from the oven and transfer them to a large bowl. Cover the bowl tightly with plastic wrap. This will create steam, making it easier to peel the skin off later. Let the peppers sit for about ten minutes, allowing them to cool down.
  • While the peppers are cooling, heat a skillet over medium heat and add the butter. Allow it to melt before adding the diced onion. Sauté the onions for about five minutes until they become translucent and soften. Don’t forget to season them with a pinch of salt and pepper to enhance their sweetness. After five minutes, stir in the minced garlic and cook for another minute until fragrant. Remove the skillet from the heat and set aside.
  • Now, return to your charred peppers. Carefully peel off the blackened skin; it should come off easily. Cut the peppers in half, discarding the stems and seeds. Chop them into chunks and set aside.
  • In a food processor, combine the roasted peppers, sautéed onions, garlic, cream cheese, and mayonnaise. Pulse the mixture until it becomes smooth and creamy. Taste, and add more salt and pepper if desired.
  • Once blended to your liking, transfer the dip to a serving bowl. Cover it and refrigerate for at least thirty minutes to allow the flavors to meld together. This step is important as it enhances the taste!
