Ingredients
  

Pasta

  • 1 pound Ziti Pasta This tubular pasta holds the sauce beautifully.

Vegetables

  • 2 tablespoons Olive Oil Used for sautéing vegetables.
  • 1 medium Onion, diced Provides a sweet and aromatic base.
  • 3 cloves Garlic, minced Adds robust flavor.
  • 1 medium Bell Pepper, diced Adds sweetness and color.
  • 1 medium Zucchini, diced Contributes moisture and texture.

Sauce and Cheese

  • 1 jar Marinara Sauce The star of the dish.
  • 15 ounces Ricotta Cheese Adds richness and texture.
  • 1 large Egg Helps bind the ricotta.
  • 1 cup Grated Parmesan Cheese Adds a salty, nutty flavor.
  • 2 cups Shredded Mozzarella Cheese Creates a gooey topping.

Herbs and Seasoning

  • 1 teaspoon Dried Oregano Adds classic Italian flavor.
  • 1 teaspoon Dried Basil Introduces fresh aroma.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a boil. Add the ziti pasta and cook until al dente. Drain and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Add the minced garlic, diced bell pepper, and zucchini to the skillet. Cook for an additional 5-7 minutes until tender.
  • Pour the marinara sauce into the skillet, stirring to combine. Let simmer for a few minutes, then remove from heat.
  • In a separate bowl, mix the ricotta cheese, egg, half of the grated Parmesan cheese, oregano, and basil until creamy.
  • In a large mixing bowl, combine the cooked ziti pasta with the marinara sauce and vegetable mixture. Toss to coat.
  • Spread half of the ziti mixture in a greased baking dish. Dollop half of the ricotta mixture over it, then sprinkle with mozzarella.
  • Layer the remaining ziti mixture, followed by the rest of the ricotta, and top with remaining mozzarella and Parmesan.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until cheese is bubbly and golden brown.
  • Let cool for about 10 minutes before serving. Garnish with fresh basil leaves if desired.

Notes

This dish can be prepared in advance and is perfect for meal prep. Feel free to customize with additional vegetables or different cheeses.
