Equipment

  • Baking Sheet
  • Oven
  • Whisk

Ingredients

  • 4 Semi-Sweet Chocolate
  • 1/2 Butter
  • 1 Powdered Sugar
  • 3 Whole Eggs
  • 1 Egg Yolk
  • 6 All-Purpose Flour

Instructions

  • Preheat your oven to 400 degrees F. This step is essential for achieving the perfect bake and gooey center.
  • In a microwave-safe bowl, combine the semi-sweet chocolate and butter. Microwave for 1 minute and 20 seconds, then whisk until the chocolate has melted and is smooth. It’s okay if it looks a bit thick at this stage; it will mix better later.
  • Add the powdered sugar, 3 whole eggs, and 1 egg yolk. Whisk everything together until well combined. You want a smooth and glossy mixture that indicates it's ready for the next step.
  • Next, add the all-purpose flour to the mixture. Be gentle when mixing; you don’t want to overwork the batter. Just whisk until no flour streaks remain.
  • Now, generously spray 4 small (1 cup) custard cups with non-stick cooking spray. This ensures that your cakes release easily after baking.
  • Evenly fill the prepared custard cups with the batter. Don’t be afraid to fill them to the top; the cakes will puff up during baking but should remain soft in the center.
  • Place the filled cups on a cookie sheet and bake them in the preheated oven for 15 to 16 minutes. Keep an eye on them; they are done when the edges are set but the centers are still slightly jiggly.
  • Once baked, remove them from the oven and let cool for 3 to 5 minutes. This waiting time is crucial; it allows the cakes to set slightly and makes them easier to invert.
  • Carefully invert each custard cup onto a serving plate. Give it a gentle tap to help release the cake. You should see that beautiful, molten center oozing out!
  • Serve immediately, perhaps with a scoop of ice cream or a dollop of whipped cream if you’re feeling indulgent. Enjoy every mouthful of your Easy Chocolate Lava Cake.

Notes

Once the cakes have been baked, remove them from the ramekins and let them cool completely. Wrap tightly with plastic wrap and freeze for up to 3 weeks. To reheat, unwrap cake and microwave on a microwave safe plate for 1 minute, or until heated through and chocolate center is still gooey.
