Instructions
Preheat your oven to 350°F (175°C).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the sliced mushrooms and minced garlic to the skillet. Cook for an additional 5-7 minutes until softened.
Sprinkle the flour over the mixture, stirring continuously for about 1-2 minutes.
Gradually whisk in the chicken broth, stirring until thickened, about 3-4 minutes.
Lower the heat and add the heavy cream, stirring until fully incorporated. Mix in thyme, salt, and pepper.
Remove from heat and stir in the shredded chicken and cooked pasta until well combined.
Transfer the mixture into a greased 9x13-inch baking dish.
Sprinkle the grated Parmesan and shredded mozzarella cheese over the top.
Bake for 25-30 minutes or until the cheese is melted and golden brown.
Let cool for a few minutes and garnish with fresh parsley or basil before serving.
Notes
This dish can be made ahead of time and frozen for later use. Just ensure to let it cool completely before freezing.
