Equipment

  • Baking Sheet
  • Oven
  • Mixing Bowl

Ingredients

  • 5 8 inch Flour Tortillas
  • 1 tablespoon Butter Melted
  • 2 tablespoons Oil
  • 1.5 cups Scrambled Eggs (about 5 eggs)
  • 8 links Farmer John's Breakfast Sausage
  • 0.5 cup Mexican Cheese

Instructions

  • Preheat your oven to 400 degrees F. This step is essential to ensure the taquitos bake evenly and get that crispy exterior that we all love.
  • Place a wire rack on top of a baking sheet. This allows air to circulate around the taquitos, helping them become crispy all over.
  • In a small bowl, combine the melted butter and oil. This mixture will not only add flavor but also give the tortillas a beautiful golden color as they bake.
  • Brush the butter and oil mixture onto one side of each flour tortilla. Make sure to coat them well as this will enhance the overall flavor.
  • Set the tortillas aside after brushing. You want them to be ready for the filling.
  • In a separate bowl, combine the scrambled eggs, cooked sausage, and Mexican cheese. Mix them thoroughly to create a flavor-packed filling.
  • Divide the delicious mixture evenly among the tortillas, placing it in the center.
  • Roll each tortilla starting from the straight edge, tucking in the sides as you go to secure the filling inside. This technique will help keep the filling intact while baking.
  • Place the rolled taquitos seam side down on the wire rack. This will help keep them from opening while they bake.
  • Bake in the preheated oven for 20 to 25 minutes or until they are golden brown and crispy. Keep an eye on them; you want that perfect golden color!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore their crispiness. You can freeze the assembled taquitos before baking. Just pop them in a freezer bag and bake from frozen, adding a few extra minutes to the cooking time.
