Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand.
Spray a mini muffin pan with cooking spray or line with mini cupcake liners.
Press the graham cracker mixture into each muffin cup to form a crust.
Bake the crust for 5-7 minutes until golden brown.
In a large mixing bowl, beat the softened cream cheese until creamy.
Add powdered sugar and sour cream, mixing until smooth.
Fold in chopped strawberries gently.
Lower the oven temperature to 325°F (160°C) and spoon the filling into each muffin cup.
Bake for 15-18 minutes until the filling is set but slightly jiggly in the center.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Chill in the refrigerator for at least 2 hours before serving.
