Filling Ingredients

  • 8 ounces Cream Cheese Softened for easy blending.
  • 1/2 cup Powdered Sugar Sweetens the filling.
  • 1/4 cup Sour Cream Adds tangy flavor.
  • 1 cup Fresh Strawberries Hulled and chopped.
  • 1 cup Whipped Topping Optional for serving.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand.
  • Spray a mini muffin pan with cooking spray or line with mini cupcake liners.
  • Press the graham cracker mixture into each muffin cup to form a crust.
  • Bake the crust for 5-7 minutes until golden brown.
  • In a large mixing bowl, beat the softened cream cheese until creamy.
  • Add powdered sugar and sour cream, mixing until smooth.
  • Fold in chopped strawberries gently.
  • Lower the oven temperature to 325°F (160°C) and spoon the filling into each muffin cup.
  • Bake for 15-18 minutes until the filling is set but slightly jiggly in the center.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Chill in the refrigerator for at least 2 hours before serving.
  • Top with whipped topping and a slice of fresh strawberry if desired.
