Instructions
In a large mixing bowl, whisk together the all-purpose flour and salt. Add the cold, cubed unsalted butter and cut into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing gently until the dough holds together. Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Slice apples into thin wedges and combine with sugar and cinnamon in a large bowl. Toss to coat and set aside.
Roll out the chilled dough on a floured surface into a rough circle about 12 inches in diameter. Transfer to a parchment-lined baking sheet.
Arrange the apple mixture in the center of the dough, leaving a 2-inch border. Drizzle salted caramel sauce over the apples and fold the edges of the dough over the filling.
Whisk together the egg and water for the egg wash. Brush the exposed crust with the egg wash.
