Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  • In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar until smooth.
  • Add eggs one at a time, whisking well after each addition.
  • Sift in flour, cocoa powder, baking powder, and salt. Fold until just combined.
  • Stir in half of the pistachios and chocolate chips into the brownie batter.
  • Pour the brownie batter into the prepared baking dish and spread evenly.
  • In a separate bowl, cream together softened butter, granulated sugar, and brown sugar for the cookie layer.
  • Add an egg and mix until fully incorporated, then sift in flour and salt, folding gently.
  • Stir in remaining chocolate chips and pistachios into the cookie batter.
  • Dollop cookie batter over brownie layer and spread gently to cover.
  • Sprinkle remaining pistachios on top.
  • Bake for 25-30 minutes, checking for doneness with a toothpick.
  • Allow to cool in the pan for at least 15 minutes before cutting into squares.
