Instructions
Preheat your oven to 325°F (160°C).
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Stir until the mixture resembles wet sand.
Press the crumb mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust for about 10 minutes, or until lightly golden. Remove and let cool.
In a large mixing bowl, beat the softened cream cheese and sour cream until smooth and creamy.
Add the granulated sugar and mix until combined. Then, add the eggs one at a time, mixing well after each addition.
Stir in the cinnamon, nutmeg, and vanilla.
Pour the cream cheese mixture over the cooled crust, spreading it evenly.
Arrange the sliced peaches on top of the cheesecake filling.
Bake for 50-60 minutes, or until the edges are set and the center is slightly wobbly.
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about 1 hour.
Remove from the oven and let cool to room temperature for another hour. Refrigerate for at least 4 hours, or overnight.
Run a knife around the edge of the springform pan to loosen the cheesecake. Release the sides and remove the pan.
Slice into wedges and serve chilled.
Notes
For variations, consider adding caramel sauce, nuts, or different fruits.
