Crust Ingredients

  • 1.5 cups Graham Cracker Crumbs Finely crushed for a smooth crust.
  • 0.5 cups Granulated Sugar For sweetening the crust.
  • 0.5 cups Unsalted Butter Melted for binding the crust.

Filling Ingredients

  • 16 ounces Cream Cheese Softened to room temperature.
  • 1 cup Sour Cream Adds tanginess to the filling.
  • 3 large Eggs Bind the filling together.
  • 2 cups Fresh Peaches Sliced for topping.
  • 1 teaspoon Cinnamon Adds warmth to the flavor.
  • 1 pinch Nutmeg Enhances the peach flavor.
  • 1 teaspoon Vanilla Bean Paste or Extract Enhances the flavor of the cheesecake.

Instructions
 

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Stir until the mixture resembles wet sand.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan.
  • Bake the crust for about 10 minutes, or until lightly golden. Remove and let cool.
  • In a large mixing bowl, beat the softened cream cheese and sour cream until smooth and creamy.
  • Add the granulated sugar and mix until combined. Then, add the eggs one at a time, mixing well after each addition.
  • Stir in the cinnamon, nutmeg, and vanilla.
  • Pour the cream cheese mixture over the cooled crust, spreading it evenly.
  • Arrange the sliced peaches on top of the cheesecake filling.
  • Bake for 50-60 minutes, or until the edges are set and the center is slightly wobbly.
  • Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about 1 hour.
  • Remove from the oven and let cool to room temperature for another hour. Refrigerate for at least 4 hours, or overnight.
  • Run a knife around the edge of the springform pan to loosen the cheesecake. Release the sides and remove the pan.
  • Slice into wedges and serve chilled.

Notes

For variations, consider adding caramel sauce, nuts, or different fruits.
