Finely chopped bell peppers or spinach.

For cooking and brushing.
Instructions
Preheat your oven to 400°F (200°C).
Let the puff pastry sit at room temperature for 10-15 minutes.
In a skillet, heat 1 tablespoon of oil or butter and sauté the chopped vegetables for 5-7 minutes.
In a mixing bowl, combine sautéed vegetables, shredded cheese, beaten eggs, and mustard. Season with salt and pepper.
Roll out the puff pastry to 1/8 inch thick and cut into 4x4 inch squares.
Place a spoonful of filling in the center of each pastry square and fold the edges over to seal.
Brush the tops with a mixture of beaten egg and oil or melted butter.
Bake for 20-25 minutes until puffed and golden brown.
Let cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days.
