  • 1 package Puff Pastry Contains two sheets.
  • 2 cups Shredded Cheese Blend of mozzarella and cheddar.
  • 2 large Eggs Beaten.
  • 2 tablespoons Mustard Your favorite type.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Chopped Vegetables Finely chopped bell peppers or spinach.
  • 2 tablespoons Oil or Butter For cooking and brushing.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Let the puff pastry sit at room temperature for 10-15 minutes.
  • In a skillet, heat 1 tablespoon of oil or butter and sauté the chopped vegetables for 5-7 minutes.
  • In a mixing bowl, combine sautéed vegetables, shredded cheese, beaten eggs, and mustard. Season with salt and pepper.
  • Roll out the puff pastry to 1/8 inch thick and cut into 4x4 inch squares.
  • Place a spoonful of filling in the center of each pastry square and fold the edges over to seal.
  • Brush the tops with a mixture of beaten egg and oil or melted butter.
  • Bake for 20-25 minutes until puffed and golden brown.
  • Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days.
