Instructions

  • Add eggs one at a time, mixing well after each addition.
  • Stir in mint extract.
  • Gradually add dry ingredients to wet mixture, stirring until just combined.
  • Fold in chocolate chips.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 20-25 minutes until a toothpick comes out with moist crumbs.
  • Prepare the mint frosting by mixing softened butter, powdered sugar, and mint extract until smooth.
  • Let brownies cool, then spread frosting evenly over the top.
  • Add green food coloring if desired and mix until the desired color is achieved.
  • Cut into squares and serve.

Notes

Store leftovers in an airtight container for up to four days. Can be frozen for up to three months.
