Instructions
Prepare your workspace and gather all ingredients.
Zest the lemons to get about 2 tablespoons of zest.
Juice the lemons to obtain about 2-3 tablespoons of juice.
In a saucepan over low heat, combine sweetened condensed milk and butter until melted and smooth.
Remove from heat and stir in lemon zest and juice.
Sift in powdered sugar and mix until thickened.
Melt white chocolate in the microwave in 20-second intervals until smooth.
Fold melted white chocolate into the lemon mixture until combined.
Refrigerate for about 2 hours until firm.
Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
Melt milk or dark chocolate and dip each truffle until fully coated.
Allow truffles to set at room temperature for about 30 minutes.
Store leftovers in an airtight container in the refrigerator.
Notes
These truffles can be frozen for up to 2 months. Thaw in the refrigerator before serving.
