  • 1 cup Granulated sugar Balances the bitterness of cocoa.
  • 1/2 cup Brown sugar Packed, enhances flavor and moisture.

Wet Ingredients

  • 1/2 cup Unsalted butter Melted and cooled slightly.
  • 2 large Eggs At room temperature for better mixing.
  • 1 teaspoon Peppermint extract Adjust according to taste preference.
  • 1/2 cup Chocolate chips Semi-sweet, optional but recommended.
  • 1/4 teaspoon Salt Enhances overall flavor.

Toppings

  • 1/4 cup Crushed peppermint candy canes For sprinkling on top before serving.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare an 8-inch square pan by greasing it or lining it with parchment paper.
  • Melt the unsalted butter in a medium saucepan over low heat, then let it cool slightly.
  • In a large mixing bowl, combine granulated sugar and brown sugar. Add the melted butter and whisk until smooth.
  • Add eggs one at a time, whisking well after each addition. Stir in peppermint extract.
  • Sift together flour, cocoa powder, and salt in another bowl. Gradually add to the wet mixture, folding gently.
  • If using, fold in chocolate chips.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25-30 minutes. Check doneness with a toothpick.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Cut into squares and sprinkle with crushed peppermint candy canes before serving.

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer storage.
