Instructions
Preheat your oven to 350°F (175°C).
Prepare an 8-inch square pan by greasing it or lining it with parchment paper.
Melt the unsalted butter in a medium saucepan over low heat, then let it cool slightly.
In a large mixing bowl, combine granulated sugar and brown sugar. Add the melted butter and whisk until smooth.
Add eggs one at a time, whisking well after each addition. Stir in peppermint extract.
Sift together flour, cocoa powder, and salt in another bowl. Gradually add to the wet mixture, folding gently.
If using, fold in chocolate chips.
Pour the batter into the prepared pan and smooth the top.
Bake for 25-30 minutes. Check doneness with a toothpick.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Cut into squares and sprinkle with crushed peppermint candy canes before serving.
