Instructions
Start by placing the Oreo cookies in a food processor. Pulse them until they are finely crushed, resembling a fine crumb.
In a mixing bowl, combine the crushed Oreos with softened cream cheese. Mix thoroughly until well combined.
Scoop out small portions (about one tablespoon each) and roll them into balls.
Place the formed balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes.
While the cake balls chill, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals.
Remove the cake balls from the refrigerator and dip each ball into the melted chocolate, using a fork to coat them.
Return the coated balls to the parchment-lined baking sheet and add sprinkles if desired.
Refrigerate for at least 15 minutes to allow the chocolate coating to harden completely.
Serve the cake balls on a platter or package them for gifting.
