Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine flour, baking powder, and a pinch of salt.
Cream together softened butter and granulated sugar until light and fluffy.
Add the egg and milk to the butter-sugar mixture and mix until combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Drop rounded tablespoons of dough onto a parchment-lined baking sheet.
Bake for 10-12 minutes or until edges are lightly golden.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Crumble cooled cookies in a large mixing bowl and mix with frosting until cohesive.
Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
Chill truffles in the refrigerator for about 30 minutes.
Melt white chocolate chips in a microwave-safe bowl.
Dip each truffle in melted white chocolate and place back on the baking sheet.
Sprinkle colorful sprinkles on top before the chocolate hardens.
Let the chocolate set before serving, or refrigerate for faster setting.
