Instructions
Start by crushing the Biscoff cookies in a food processor until they resemble fine crumbs. Set aside in a mixing bowl.
In a small saucepan, gently heat the heavy cream over medium heat until it begins to simmer.
Pour the heated cream over the crushed Biscoff cookies and stir until fully incorporated.
Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
Roll the mixture into balls, approximately the size of a walnut, and place on a parchment-lined baking sheet.
Melt the chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth.
Dip each truffle into the melted chocolate and let excess chocolate drip off.
Return the coated truffles to the refrigerator for another 30 minutes to set.
Roll the truffles in cocoa powder or sprinkle with crushed Biscoff cookies before the chocolate sets.
Transfer the truffles to an airtight container for storage. They can be enjoyed immediately or kept for up to two weeks in the refrigerator.
