Ingredients
  

Meat

  • 3-4 pounds Beef Chuck Roast Rich, marbled cut of meat that becomes tender when slow-cooked.

Chiles

  • 4-6 pieces Dried Guajillo Chiles Add a deep red color and mild heat; stems removed.

Vegetables

  • 1 large Onion Chopped, adds sweetness and depth.
  • 4 cloves Garlic Minced, provides bold flavor.

Spices

  • 2 teaspoons Ground Cumin Contributes earthy flavor.
  • 1 teaspoon Oregano Adds herby note.
  • 1 teaspoon Black Pepper Freshly ground, for seasoning.
  • 2 teaspoons Salt Essential for flavor enhancement.
  • 4 cups Beef Broth Enhances flavor of the birria.

Garnishes

  • 1 bunch Cilantro Roughly chopped, for garnish.
  • 1 piece Lime Cut into wedges, for serving.
  • 12-15 pieces Corn Tortillas Preferred for holding the filling.

Instructions
 

  • Soak the dried guajillo chiles in hot water for 15-20 minutes until soft.
  • Chop the onion and mince the garlic. Sauté the onion in a large pot with oil until translucent, then add garlic and sauté for an additional minute.
  • Drain the soaked chiles and blend with a cup of beef broth, cumin, oregano, black pepper, and salt until smooth.
  • Add the blended sauce to the pot with sautéed onion and garlic, then add the beef chunks, coating them well.
  • Pour in the remaining beef broth, cover, and simmer on low heat for 3-4 hours until the meat is tender.
  • Shred the beef and return it to the pot, stirring to coat in the broth.
  • Toast corn tortillas in a skillet, fill with shredded beef, and fold. Optionally dip in broth and crisp in the skillet.
  • Serve tacos garnished with cilantro and lime wedges.

Notes

Feel free to experiment with different meats or add vegetables for a unique twist on this classic dish.
