Instructions
Soak the dried guajillo chiles in hot water for 15-20 minutes until soft.
Chop the onion and mince the garlic. Sauté the onion in a large pot with oil until translucent, then add garlic and sauté for an additional minute.
Drain the soaked chiles and blend with a cup of beef broth, cumin, oregano, black pepper, and salt until smooth.
Add the blended sauce to the pot with sautéed onion and garlic, then add the beef chunks, coating them well.
Pour in the remaining beef broth, cover, and simmer on low heat for 3-4 hours until the meat is tender.
Shred the beef and return it to the pot, stirring to coat in the broth.
Toast corn tortillas in a skillet, fill with shredded beef, and fold. Optionally dip in broth and crisp in the skillet.
Serve tacos garnished with cilantro and lime wedges.
