  • 1 cup Fresh Blueberries Can use frozen, thawed and drained.
  • 1.5 cups Rolled Oats Adds chewy texture and fiber.
  • 0.25 cup Honey or Maple Syrup Natural sweetener.
  • 0.5 cup Almond Butter or Peanut Butter Adds creaminess and healthy fats.
  • 1 teaspoon Baking Powder Helps cookies rise.
  • 1 pinch Salt Enhances flavors.
  • 0.5 teaspoon Ground Cinnamon Optional, adds warmth.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas in a large mixing bowl until smooth with some lumps.
  • Add honey or maple syrup to the mashed bananas and mix well.
  • Incorporate almond butter or peanut butter into the banana mixture until well combined.
  • In a separate bowl, combine rolled oats, baking powder, salt, and cinnamon. Whisk together.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Gently fold in the fresh blueberries.
  • Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the sheet.
  • Flatten the cookies slightly with the back of a spoon.
  • Bake for 12-15 minutes until lightly golden around the edges.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
