Instructions
1. Activate the yeast by combining warm milk, active dry yeast, and a pinch of sugar. Let sit for 5-10 minutes until frothy.
2. In a large bowl, whisk flour, sugar, and salt. Make a well and add yeast mixture, eggs, and melted butter. Mix until shaggy dough forms.
3. Knead dough on a floured surface for 8-10 minutes until smooth and elastic. Add more flour if too sticky.
4. Place dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours until doubled in size.
5. Prepare filling by mixing walnuts, pistachios, cinnamon, and honey in a bowl.
6. Roll out risen dough into a rectangle (18x12 inches), brush with melted butter, and spread filling evenly.
7. Roll dough tightly from one long end, pinch seams, and slice into 12 equal pieces.
8. Place buns in a greased baking dish, cover, and let rise for 30-45 minutes.
9. Preheat oven to 350°F (175°C). Prepare glaze by mixing honey and water in a saucepan over low heat.
10. Bake buns for 25-30 minutes until golden brown. Brush with honey glaze immediately after baking.
11. Allow to cool in the pan for a few minutes before transferring to a wire rack.
12. Serve warm or at room temperature.
