Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine flour, baking powder, and salt. Whisk until well-blended.
  • Cream together butter and sugar until light and fluffy, about 2-3 minutes.
  • Add eggs and vanilla extract, mixing until fully incorporated.
  • Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  • Chill the dough in the refrigerator for about 30 minutes.
  • Prepare baking sheets with parchment paper.
  • Portion out the dough and roll into balls, placing them on the baking sheets.
  • Create an indent in each cookie and fill with fruit filling.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Cool on baking sheets for 5 minutes before transferring to a wire rack.
  • Prepare frosting by mixing powdered sugar and milk until smooth.
  • Spread frosting over cooled cookies and add sprinkles if desired.
  • Allow frosting to set before serving.
