Instructions
Preheat your oven to 350°F (175°C).
Line an 8x8-inch baking dish with parchment paper.
In a large mixing bowl, combine the mixed nuts.
Add the dark chocolate chips to the bowl with the nuts.
In a separate bowl, mix together honey and peanut butter until smooth.
Add the honey and peanut butter mixture to the bowl with the nuts and chocolate.
Add rolled oats to the mixture and stir well.
Sprinkle in a pinch of sea salt and stir again.
If using, add vanilla extract and fold it into the mixture.
Pour the mixture into the prepared baking dish and press down firmly.
Sprinkle extra sea salt on top before baking.
Bake for 20-25 minutes until edges are golden and center is firm.
Let cool completely in the pan for about 30 minutes.
Lift the parchment paper to remove the bars and cut into desired sizes.
Store in an airtight container.
Enjoy as a snack or breakfast!

For variations, try different nuts, add dried fruits, or drizzle melted chocolate on top.
