Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the softened cream cheese and granulated sugar. Mix until smooth and creamy.
Add the egg and vanilla flavoring, mixing until well incorporated.
In a separate bowl, whisk together the flour and 1 teaspoon of cinnamon. Gradually add to the cream cheese mixture.
Prepare a baking dish by greasing it lightly.
Portion out the cheesecake batter into the prepared baking dish, about 1 tablespoon each.
In a small bowl, combine the remaining cinnamon and granulated sugar for the churro coating.
Bake for 15-20 minutes until set and slightly golden. Allow to cool for a few minutes.
Roll the warm bites in the cinnamon-sugar mixture.
Transfer to a wire rack to cool completely, then dust with powdered sugar before serving.
