Frosting

  • 1 cup Butter, softened Base for the frosting.
  • 3 cups Powdered sugar Sweetens the frosting.
  • ½ cup Cocoa powder Adds chocolate flavor to frosting.
  • ¼ cup Milk Adjusts consistency of frosting.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with cupcake liners.
  • In a large mixing bowl, combine flour, cocoa powder, sugar, baking soda, and salt. Whisk until well combined.
  • In a separate bowl, whisk together eggs, milk, and vegetable oil.
  • Gradually add wet ingredients to dry ingredients, stirring gently until just combined.
  • Stir in boiling water until combined.
  • Spoon batter into cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick comes out clean.
  • Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • Prepare frosting by beating butter, powdered sugar, cocoa powder, and milk until smooth.
  • Frost cooled cupcakes and garnish as desired.

Notes

Store leftovers in an airtight container at room temperature for up to three days.
