Ingredients
  

Crust

  • 24 cookies Oreo Cookies, crushed These cookies will form the base of your cheesecake bars.
  • 0.5 cup Unsalted Butter, melted Binds the crushed Oreo cookies together.

Filling

  • 16 ounces Cream Cheese, softened The star of the cheesecake filling.
  • 0.75 cup Granulated Sugar Sweetens the cheesecake filling.
  • 1 teaspoon Vanilla Flavoring Enhances the flavor of the cheesecake.
  • 2 large Eggs Added at room temperature.
  • 1 cup Semi-Sweet Chocolate Chips Adds richness to the cheesecake.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare a 9x13 inch baking pan by greasing it lightly or lining it with parchment paper.
  • In a medium bowl, combine the crushed Oreo cookies and melted unsalted butter. Mix until the crumbs are evenly coated.
  • Press the Oreo mixture evenly into the bottom of the prepared baking pan.
  • Bake the crust for about 10 minutes.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the granulated sugar and beat until well combined.
  • Add in the vanilla flavoring and mix until incorporated.
  • Add the eggs one at a time, mixing on low speed until just combined.
  • Gently fold in the semi-sweet chocolate chips using a spatula.
  • Pour the cheesecake filling over the crust and spread evenly.
  • Bake for an additional 25-30 minutes until the edges are set.
  • Let the cheesecake bars cool in the pan at room temperature for about an hour.
  • Refrigerate the bars for at least 4 hours, preferably overnight.
  • Lift the bars out of the pan using the parchment paper and cut into squares.
  • Dust with powdered sugar before serving.

Notes

These bars can be made a day in advance and are perfect for various occasions.
