  • Begin by preparing the marinade. In a large mixing bowl, combine the minced garlic, chopped chipotle peppers, adobo sauce, olive oil, lime juice, honey, salt, and pepper. Whisk these ingredients together until you have a smooth marinade.
  • Add the cubed chicken breast to the marinade. Ensure each piece is well-coated by mixing thoroughly. Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Allow the chicken to marinate for at least 30 minutes, but for best results, marinate for 2-4 hours in the refrigerator.
  • While the chicken is marinating, soak your wooden skewers in water for about 30 minutes if using wooden skewers. This prevents them from burning during cooking.
  • Prepare the bang bang sauce by combining the sour cream and chili sauce in a separate bowl. Mix until smooth and adjust seasoning as desired.
  • Once the chicken is marinated, preheat your grill or oven to medium-high heat.
  • Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece to allow for even cooking.
  • Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  • If using an oven, place the skewers on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 15-20 minutes, turning halfway through for even cooking.
  • Once cooked, remove the skewers from the heat. Let them rest for a few minutes to allow the juices to redistribute.
