Instructions
Pat the chicken breasts dry with a paper towel.
Slice the chicken breast into even strips or cutlets, about ½ inch thick.
In a shallow bowl, whisk together the eggs until well beaten.
In another shallow dish, combine the flour with a pinch of salt and pepper.
In a separate bowl, place the breadcrumbs.
Coat the chicken by dipping each piece into the flour, then the egg, and finally the breadcrumbs.
Heat the vegetable oil in a large skillet over medium-high heat.
Carefully place the coated chicken pieces into the hot oil and fry for about 3-4 minutes on each side until golden brown.
Transfer the chicken to a plate lined with paper towels to absorb excess oil.
Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a small bowl.
Toast the sandwich buns lightly until golden brown.
Assemble the sandwich by spreading Bang Bang sauce on the bottom half of each bun, layering on crispy chicken, lettuce, and tomato slices.
Top with more Bang Bang sauce if desired and place the other half of the bun on top.
Serve immediately while the chicken is hot and crispy.
Notes
Customize with jalapeños for extra heat or substitute chicken with crispy fried cauliflower for a vegetarian option.
