Instructions
 

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add shrimp to the skillet in a single layer and cook for 2-3 minutes until pink and opaque. Remove and set aside.
  • Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  • Stir in sun-dried tomatoes and cook for another minute.
  • Pour in heavy cream and stir until well combined. Bring to a gentle simmer.
  • Add fresh spinach and stir until wilted, about 2-3 minutes.
  • Incorporate Parmesan cheese and stir until melted. Season with salt and pepper to taste.
  • Return shrimp to the skillet and toss gently in the sauce. Heat through for 1-2 minutes.
  • Remove from heat and sprinkle with fresh basil before serving.
  • Serve immediately with pasta, rice, or crusty bread.
