Heat olive oil in a large skillet over medium heat until shimmering.

Stir in sun-dried tomatoes and cook for another minute.
Pour in heavy cream and stir until well combined. Bring to a gentle simmer.
Add fresh spinach and stir until wilted, about 2-3 minutes.
Incorporate Parmesan cheese and stir until melted. Season with salt and pepper to taste.
Return shrimp to the skillet and toss gently in the sauce. Heat through for 1-2 minutes.
Remove from heat and sprinkle with fresh basil before serving.
Serve immediately with pasta, rice, or crusty bread.
