Instructions
 

  • 1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes.
  • 2. In a large skillet, heat olive oil over medium heat until shimmering.
  • 3. Add sliced mushrooms to the skillet and sauté for 5-7 minutes until golden brown.
  • 4. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • 5. Add fresh spinach and stir until wilted, about 2-3 minutes.
  • 6. Reduce heat to low, pour in heavy cream, and stir to combine.
  • 7. Add grated Parmesan cheese and stir until melted and creamy. Adjust consistency with reserved pasta water if needed.
  • 8. Season with salt, pepper, and nutmeg to taste.
  • 9. Drain pasta and add it to the skillet, tossing to coat in the sauce.
  • 10. Simmer for an additional minute, then serve topped with extra Parmesan and fresh spinach leaves.

Notes

For variations, consider adding grilled chicken or shrimp for protein, or substitute half the cream with yogurt for a lighter dish.
