  • 1 large jar Dill pickles Preferably spears or whole pickles.
  • 8 ounces Cream cheese Softened and at room temperature.
  • 1/2 cup Shredded cheddar cheese Can use mild or sharp cheddar.
  • 1/4 cup Finely chopped green onions Adds a fresh, oniony crunch.
  • 1 tablespoon Garlic powder For depth of flavor.
  • 1 tablespoon Dill weed Reinforces the pickle flavor.
  • 4 large Flour tortillas Large tortillas to hold the filling.
  • to taste Salt and pepper For seasoning.

Instructions
 

  • In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, finely chopped green onions, garlic powder, dill weed, and a pinch of salt and pepper. Blend until smooth.
  • If using whole pickles, dry them with paper towels. If using spears, leave them as is.
  • Lay a flour tortilla flat. Spoon a generous amount of the cream cheese mixture onto the tortilla, spreading it evenly, leaving about an inch of space around the edges. Place pickles on one end.
  • Starting from the end with the pickles, roll the tortilla tightly. Use extra cream cheese to seal the edge if needed.
  • Repeat with remaining tortillas and filling. Chill wrapped in plastic wrap for at least one hour.
  • Once chilled, slice into bite-sized pieces and serve.

Notes

These roll-ups can be made a day in advance. Store leftovers in an airtight container in the refrigerator for 2-3 days.
