1large jarDill picklesPreferably spears or whole pickles.
8ouncesCream cheeseSoftened and at room temperature.
1/2cupShredded cheddar cheeseCan use mild or sharp cheddar.
1/4cupFinely chopped green onionsAdds a fresh, oniony crunch.
1tablespoonGarlic powderFor depth of flavor.
1tablespoonDill weedReinforces the pickle flavor.
4largeFlour tortillasLarge tortillas to hold the filling.
to tasteSalt and pepperFor seasoning.
Instructions
In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, finely chopped green onions, garlic powder, dill weed, and a pinch of salt and pepper. Blend until smooth.
If using whole pickles, dry them with paper towels. If using spears, leave them as is.
Lay a flour tortilla flat. Spoon a generous amount of the cream cheese mixture onto the tortilla, spreading it evenly, leaving about an inch of space around the edges. Place pickles on one end.
Starting from the end with the pickles, roll the tortilla tightly. Use extra cream cheese to seal the edge if needed.
Repeat with remaining tortillas and filling. Chill wrapped in plastic wrap for at least one hour.
Once chilled, slice into bite-sized pieces and serve.
Notes
These roll-ups can be made a day in advance. Store leftovers in an airtight container in the refrigerator for 2-3 days.
