  • 2 medium Carrots Diced.

Instructions
 

  • Prepare your ingredients: dice the onion, carrots, and celery, and mince the garlic.
  • In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 3-4 minutes.
  • Add minced garlic and stir for about 1 minute until fragrant.
  • Incorporate diced carrots and celery, sauté for an additional 5 minutes.
  • Add chicken breast and pour in chicken broth. Bring to a gentle boil.
  • Reduce heat, cover, and simmer for about 20 minutes.
  • Remove chicken, shred it, and return it to the pot.
  • Add heavy cream and thyme, simmer for an additional 5-10 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
