Instructions
Prepare your ingredients: dice the onion, carrots, and celery, and mince the garlic.
In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 3-4 minutes.
Add minced garlic and stir for about 1 minute until fragrant.
Incorporate diced carrots and celery, sauté for an additional 5 minutes.
Add chicken breast and pour in chicken broth. Bring to a gentle boil.
Reduce heat, cover, and simmer for about 20 minutes.
Remove chicken, shred it, and return it to the pot.
Add heavy cream and thyme, simmer for an additional 5-10 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with fresh herbs if desired.
Notes
