  • 1. Begin by cooking the pasta. In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside, reserving about half a cup of the pasta water for later use.
  • 2. While the pasta is cooking, prepare the chicken. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once the oil is shimmering, add the bite-sized chicken pieces to the skillet. Make sure not to overcrowd the pan to ensure even cooking.
  • 3. Season the chicken with salt, pepper, and Italian seasoning. Sauté the chicken for about 5-7 minutes, or until it is golden brown and cooked through.
  • 4. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  • 5. Reduce the heat to medium-low and pour in the heavy cream. Stir the mixture, scraping up any browned bits from the bottom of the skillet to incorporate all the flavors. Allow the cream to simmer gently for about 3-4 minutes until it thickens slightly.
  • 6. Once the sauce has thickened, add the grated Parmesan cheese and stir until it melts completely.
  • 7. Add the fresh spinach to the skillet. Stir well to combine, allowing the spinach to wilt for about 1-2 minutes.
  • 8. Toss the cooked pasta into the skillet, coating it well with the creamy sauce. Adjust the seasoning with additional salt and pepper to taste.
  • 9. Serve the dish warm, garnished with extra Parmesan cheese and freshly cracked black pepper.
