Heavy Cream

Instructions
 

  • Wash and peel the potatoes, then cut them into evenly sized chunks, about 1 to 2 inches. Place the cut potatoes in a large pot and cover them with cold water, adding a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 15 to 20 minutes until fork-tender.
  • In a medium saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant and lightly golden. Be cautious not to burn it.
  • Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer gently for about 5 minutes.
  • Season the sauce with salt and pepper to taste. Stir occasionally as it simmers, allowing it to thicken slightly.
  • Once the potatoes are cooked, drain them and return to the pot. Pour the creamy garlic sauce over the potatoes, gently folding to coat each piece evenly.
  • Allow the potatoes to sit for a few minutes to absorb some of the sauce. Before serving, garnish with chopped parsley.

Notes

For variations, consider adding cheese, crushed red pepper flakes, or sautéed greens. You can also roast the potatoes instead of boiling them for a different texture.
