Instructions
Prepare the ingredients: Dice the onion, carrots, and celery. Mince the garlic and rinse the rice.
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until soft.
Add minced garlic and sauté for an additional 1-2 minutes.
Add chicken broth and bring to a gentle simmer. Stir in the rinsed rice.
Season with salt, pepper, thyme, and paprika. Simmer for 15-20 minutes until rice is tender.
Add chicken breasts to the pot and simmer for 10-15 minutes until cooked through.
Remove chicken, shred it, and return to the pot. Stir in cream cheese until melted and combined.
Adjust seasoning if necessary, then let sit for a few minutes before serving.
