  • 8 ounces Cream Cheese Softened for easier blending.
  • 1 medium Onion Diced for flavor.
  • 3 cloves Garlic Minced for robust flavor.
  • 2 medium Carrots Diced for sweetness and color.
  • 1 stalk Celery Diced for fresh texture.

Seasonings

  • 2 tablespoons Olive Oil For sautéing vegetables.

Instructions
 

  • Prepare the ingredients: Dice the onion, carrots, and celery. Mince the garlic and rinse the rice.
  • In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until soft.
  • Add minced garlic and sauté for an additional 1-2 minutes.
  • Add chicken broth and bring to a gentle simmer. Stir in the rinsed rice.
  • Season with salt, pepper, thyme, and paprika. Simmer for 15-20 minutes until rice is tender.
  • Add chicken breasts to the pot and simmer for 10-15 minutes until cooked through.
  • Remove chicken, shred it, and return to the pot. Stir in cream cheese until melted and combined.
  • Adjust seasoning if necessary, then let sit for a few minutes before serving.
