Instructions
Preheat your oven to 350°F (175°C).
Sauté the spinach in a large skillet with olive oil over medium heat for about 2-3 minutes until wilted. Remove from heat and allow to cool slightly.
In a large bowl, combine sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix well until smooth and creamy.
Fold in the cooked chicken and sautéed spinach into the creamy mixture until well coated.
Grease a 9x13-inch casserole dish lightly with oil. Pour the chicken and spinach mixture into the dish, spreading it evenly.
Sprinkle the shredded cheese over the top of the mixture.
Sprinkle breadcrumbs over the cheese layer.
Bake the casserole for 25-30 minutes, or until the top is golden brown and bubbling.
Remove from the oven and allow to cool for a few minutes before serving.
Optionally, sprinkle fresh herbs on top before serving.
Notes
Can prepare a day in advance and store in the refrigerator. Bake when ready to serve.
