  • 2 cups cooked chicken, shredded or diced Can use rotisserie chicken or leftover roasted chicken.
  • 4 cups fresh spinach Wash and thoroughly dry the leaves before use.
  • 1 cup sour cream Base of the creamy sauce.
  • 1 cup cream of chicken soup Adds depth and creaminess.
  • 1 cup shredded cheese Cheddar or mozzarella works best.
  • 1/2 cup breadcrumbs For topping the casserole.
  • 1 teaspoon garlic powder Adds aromatic flavor.
  • 1/2 teaspoon onion powder Enhances overall taste.
  • to taste salt and pepper Essential for seasoning.
  • 2 tablespoons olive oil Used for sautéing the spinach.

Optional Ingredients

  • fresh herbs (thyme or parsley) For added flavor and freshness.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Sauté the spinach in a large skillet with olive oil over medium heat for about 2-3 minutes until wilted. Remove from heat and allow to cool slightly.
  • In a large bowl, combine sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix well until smooth and creamy.
  • Fold in the cooked chicken and sautéed spinach into the creamy mixture until well coated.
  • Grease a 9x13-inch casserole dish lightly with oil. Pour the chicken and spinach mixture into the dish, spreading it evenly.
  • Sprinkle the shredded cheese over the top of the mixture.
  • Sprinkle breadcrumbs over the cheese layer.
  • Bake the casserole for 25-30 minutes, or until the top is golden brown and bubbling.
  • Remove from the oven and allow to cool for a few minutes before serving.
  • Optionally, sprinkle fresh herbs on top before serving.

Notes

Can prepare a day in advance and store in the refrigerator. Bake when ready to serve.
