Instructions
Heat olive oil in a large skillet over medium heat until shimmering.
Add diced chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
Add minced garlic and cook for an additional minute until fragrant.
Pour in chicken broth, scraping the bottom of the pan to release browned bits, and bring to a gentle simmer.
Add gnocchi and cook for 3-4 minutes until they float to the surface.
Reduce heat to low, stir in heavy cream, and simmer for 3-5 minutes until sauce thickens slightly.
Add fresh spinach and stir until wilted, about 2 minutes.
Stir in grated Parmesan cheese until melted, and adjust seasoning with salt and pepper.
Serve hot, garnished with fresh herbs.
