Ingredients
  

  • 8 ounces cream cheese softened to room temperature
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated mozzarella plus extra for topping
  • 1/2 cup freshly grated parmesan cheese plus extra for topping
  • 1 clove garlic finely minced
  • 14 ounces artichoke hearts well drained, excess liquid squeezed out and roughly chopped
  • 1/2 cup frozen spinach thawed, well drained and excess liquid squeezed out
  • Pinch red pepper flakes or cayenne pepper optional
  • zest of one lemon optional

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. This will ensure your dip bakes evenly and reaches that perfect bubbly consistency. Spray a small baking dish with cooking spray and set it aside.
  • In a large mixing bowl, combine the cream cheese, sour cream, and mayonnaise. Use a hand mixer or a sturdy whisk to mix them together until they are well combined and creamy. This step is crucial for achieving that smooth texture!
  • Next, stir in the mozzarella, parmesan, artichoke hearts, spinach, red pepper flakes (if using), and lemon zest into the mixture. Make sure to mix until everything is evenly distributed. You want every bite to be packed with flavor.
  • Transfer the dip mixture into your prepared baking dish. Spread it out evenly with a spatula to ensure that it bakes uniformly. Sprinkle a little extra parmesan and mozzarella on top for a golden finish.
  • Now it’s time to bake! Place the baking dish into the preheated oven and let it bake for 20 to 25 minutes. You’ll know it’s ready when the top is bubbly and begins to brown. If it needs a little extra color, feel free to place it under the broiler for 1 to 2 minutes, but keep a close eye on it!
