Instructions
Preheat your oven to 400°F (200°C).
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside, reserving a cup of pasta water.
In a baking dish, combine halved cherry tomatoes and minced garlic. Drizzle with olive oil, season with salt and pepper, and toss to coat.
Add the block of feta cheese to the center of the baking dish, surrounded by tomatoes. Drizzle feta with olive oil and season with salt and pepper.
Bake for 30 minutes until feta is golden and soft, and tomatoes burst.
Remove from oven and let cool for a minute. Mash the baked feta with a fork, mixing it with the roasted tomatoes and garlic.
Add cooked pasta to the baking dish and toss to combine, adding reserved pasta water as needed for consistency.
Fold in fresh basil leaves and serve warm, garnished with additional basil if desired.
