Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round cake pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the orange juice and grated orange zest until combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Fold in the fresh cranberries.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • If desired, mix powdered sugar with a little orange juice to create a glaze and drizzle over the cooled cake.
