Instructions
 

  • Step 1: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.
  • Step 2: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  • Step 3: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  • Step 4: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the smoked paprika, chili flakes, and oregano, stirring to combine.
  • Step 5: Slice the cooked chicken thighs into bite-sized pieces and return them to the skillet. Add the drained linguine, tossing everything together. Gradually add reserved pasta water until the sauce reaches your desired consistency.
  • Step 6: Stir in the freshly chopped parsley, adjusting seasoning with more salt and pepper as needed. Toss to ensure the pasta is well coated.
  • Step 7: Plate the Cowboy Butter Chicken Linguine and sprinkle with grated Parmesan cheese if desired. Serve immediately.
