Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a standard muffin tin with cooking spray or oil.
  • In a large mixing bowl, crack the eggs and whisk until fully combined.
  • Fold in the cottage cheese gently into the whisked eggs.
  • Add in the shredded cheese, diced vegetables, and chopped herbs. Stir until evenly distributed. Season with salt and pepper.
  • Pour the egg mixture into each muffin cup, filling them about three-quarters full.
  • Bake for approximately 20 to 25 minutes until puffed up and lightly golden on top.
  • Let the muffin tin cool for a few minutes before gently removing the egg bites.
  • Enjoy warm or store in an airtight container for later.

Notes

These egg bites can be made in advance and stored in the fridge for up to five days or frozen for up to three months.
