Instructions
Start by preparing your ingredients. Rinse the mixed greens thoroughly and pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture.
Wash the cherry tomatoes under cool water. Once cleaned, slice them in half and set them aside.
Dice the cucumber into bite-sized pieces.
Remove the stem, seeds, and membranes from the bell pepper and cut it into small dice.
Grate the carrots using a box grater or food processor.
Thinly slice the red onion. Soak in cold water for 10 minutes if the flavor is too strong.
In a large mixing bowl, combine all the prepared vegetables: mixed greens, cherry tomatoes, cucumber, bell pepper, shredded carrots, and red onion. Toss gently to combine.
Add the sliced black olives and drained chickpeas to the bowl.
For the dressing, combine the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small jar with a lid. Shake vigorously until well combined.
Drizzle the dressing over the salad mixture and toss gently to coat.
If using feta cheese, sprinkle it over the top and gently toss to combine.
Serve immediately, or refrigerate for up to an hour to allow flavors to meld.
