Ingredients
  

Vegetables

  • 8 cups Mixed Greens Such as romaine, spinach, and arugula.
  • 1 cup Cherry Tomatoes Halved.
  • 1 unit Cucumber Diced.
  • 1 unit Bell Pepper Diced (any color).
  • 1 cup Shredded Carrots
  • 1/2 unit Red Onion Thinly sliced.
  • 1/2 cup Black Olives Sliced.
  • 1 cup Chickpeas Drained and rinsed.
  • 1/4 cup Fresh Parsley Chopped.

Optional Ingredients

  • 1/2 cup Feta Cheese Crumble (optional).

Dressing

  • 1/3 cup Olive Oil High-quality.
  • 1/4 cup Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Honey

Seasoning

Instructions
 

  • Start by preparing your ingredients. Rinse the mixed greens thoroughly and pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture.
  • Wash the cherry tomatoes under cool water. Once cleaned, slice them in half and set them aside.
  • Dice the cucumber into bite-sized pieces.
  • Remove the stem, seeds, and membranes from the bell pepper and cut it into small dice.
  • Grate the carrots using a box grater or food processor.
  • Thinly slice the red onion. Soak in cold water for 10 minutes if the flavor is too strong.
  • In a large mixing bowl, combine all the prepared vegetables: mixed greens, cherry tomatoes, cucumber, bell pepper, shredded carrots, and red onion. Toss gently to combine.
  • Add the sliced black olives and drained chickpeas to the bowl.
  • For the dressing, combine the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small jar with a lid. Shake vigorously until well combined.
  • Drizzle the dressing over the salad mixture and toss gently to coat.
  • If using feta cheese, sprinkle it over the top and gently toss to combine.
  • Serve immediately, or refrigerate for up to an hour to allow flavors to meld.
