  • 1 pound Fresh Green Beans Look for bright green, firm beans.
  • 4 cups Water For blanching the green beans.
  • 1 tablespoon Salt Enhances flavor during blanching.
  • 2 tablespoons Olive Oil Extra virgin for sautéing.
  • 3 cloves Garlic Minced for flavor.
  • 0.5 teaspoon Black Pepper Freshly cracked for seasoning.
  • 0.5 lemon Lemon Juice Adds brightness to the dish.
  • 1 handful Parsley Chopped, for garnish (optional).

Instructions
 

  • Rinse the green beans under cold water and trim the ends.
  • In a large pot, bring 4 cups of water and 1 tablespoon of salt to a rolling boil.
  • Add the green beans to the boiling water and blanch for 3-5 minutes until bright green and tender-crisp.
  • Transfer the beans to a bowl of ice water to stop the cooking process, then drain well.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat and sauté the minced garlic for 30 seconds.
  • Add the blanched green beans to the skillet and cook for 3-4 minutes, stirring to coat with the garlic oil.
  • Season with black pepper and toss to combine.
  • Just before serving, squeeze lemon juice over the beans and toss gently.
  • Garnish with chopped parsley if desired and serve warm.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently before serving.
