Instructions
Rinse the green beans under cold water and trim the ends.
In a large pot, bring 4 cups of water and 1 tablespoon of salt to a rolling boil.
Add the green beans to the boiling water and blanch for 3-5 minutes until bright green and tender-crisp.
Transfer the beans to a bowl of ice water to stop the cooking process, then drain well.
In a skillet, heat 2 tablespoons of olive oil over medium heat and sauté the minced garlic for 30 seconds.
Add the blanched green beans to the skillet and cook for 3-4 minutes, stirring to coat with the garlic oil.
Season with black pepper and toss to combine.
Just before serving, squeeze lemon juice over the beans and toss gently.
Garnish with chopped parsley if desired and serve warm.
Notes
Store leftovers in an airtight container for up to three days. Reheat gently before serving.
