Instructions
Preheat your oven to 375°F (190°C).
Wash and slice the tomatoes into quarter-inch thick rounds.
Combine chopped basil and thyme with sliced tomatoes, drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss gently.
Mix breadcrumbs with the remaining olive oil in a separate bowl.
Grease a baking dish with olive oil and layer the tomatoes, breadcrumbs, and cheese (if using) until all ingredients are used, finishing with breadcrumbs on top.
Cover with aluminum foil and bake for 25-30 minutes.
Remove foil and bake for an additional 15-20 minutes until breadcrumbs are golden brown.
