Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add ground Italian sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
Add minced garlic and sauté for 1-2 minutes until fragrant.
Incorporate diced carrots and chopped celery. Cook for about 5 minutes until softened.
Pour in vegetable broth, scraping the bottom of the pot. Bring to a boil, then reduce to a simmer.
Add cheese tortellini and cook according to package instructions, about 3-5 minutes.
Fold in fresh spinach and stir until wilted, about 1-2 minutes.
Season with Italian seasoning, salt, and pepper. Simmer for an additional 5 minutes.
Remove from heat and serve hot, garnished with grated Parmesan cheese.
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
