Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Gather all your ingredients and chop the vegetables.
  • In a large skillet over medium heat, add a splash of oil and sauté the chopped onions for about 3-4 minutes until translucent.
  • Add the diced bell peppers to the skillet and sauté for another 2-3 minutes.
  • Add the cooked chicken or black beans along with the spices and cook for another 2-3 minutes.
  • Cut each flour tortilla into quarters to create triangles.
  • On a large baking sheet, arrange half of the tortilla triangles in a single layer.
  • Sprinkle half of the shredded cheese over the tortilla triangles, then add half of the sautéed mixture on top.
  • Repeat the layering process with the remaining tortilla triangles, cheese, and filling.
  • Bake for approximately 10-15 minutes until the cheese is melted and bubbly.
  • Prepare your toppings while the nachos are baking.
  • Remove the nachos from the oven and let them cool for a minute before serving.
  • Garnish with fresh cilantro and any additional toppings you desire.
  • Serve hot and enjoy!
