Ingredients
  

Crust Ingredients

  • 1.5 cups All-purpose flour For the crust

Filling Ingredients

  • 1 cups Granulated sugar For the filling
  • 1 cups Light corn syrup For the filling
  • 2 large Eggs For the filling
  • 1.5 cups Chopped pecans For the filling
  • 1 teaspoon Vanilla flavoring For the filling
  • 0.5 teaspoon Salt To balance sweetness

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine flour, ½ cup of sugar, and a pinch of salt. Whisk until well combined.
  • Add softened butter to the dry ingredients and work it into the mixture until it resembles coarse crumbs.
  • Press the crumb mixture into the bottom of a greased 9x13-inch baking dish evenly. Bake for about 15 minutes or until lightly golden.
  • In a separate bowl, whisk together corn syrup, 1 cup of sugar, and eggs until smooth.
  • Add vanilla flavoring and stir to incorporate.
  • Fold in chopped pecans until evenly distributed.
  • Pour the pecan filling over the hot crust and spread evenly.
  • Bake for an additional 25 to 30 minutes until golden brown and slightly jiggly in the center.
  • Allow to cool completely in the pan on a wire rack before cutting into squares.
  • Serve at room temperature or slightly chilled.

Notes

Store leftovers in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
