Ingredients
  

Pasta

  • 400 grams Spaghetti Cook until al dente.

Sauce

  • 4 large Eggs At room temperature for better emulsification.
  • 100 grams Parmesan Cheese Freshly grated for best flavor.
  • 1 teaspoon Black Pepper Freshly cracked, adjust to taste.
  • 1-2 teaspoons Salt For boiling pasta, adjust based on cheese saltiness.

Instructions
 

  • Start by bringing a large pot of salted water to a rolling boil.
  • Add the spaghetti and cook according to package instructions until al dente.
  • While the pasta cooks, crack the eggs into a mixing bowl and whisk them together. Incorporate the grated Parmesan cheese.
  • Prepare a large skillet over medium heat and add any aromatic ingredients if desired.
  • Once the spaghetti is cooked, reserve about 1 cup of the pasta cooking water, then drain the pasta.
  • Add the hot spaghetti to the skillet and toss with any aromatic ingredients.
  • Remove the skillet from heat and pour the egg and cheese mixture over the hot pasta, tossing continuously.
  • Season generously with freshly cracked black pepper and adjust seasoning as needed.
  • Serve immediately, garnished with additional grated Parmesan and black pepper.

Notes

For variations, consider adding sautéed mushrooms, seasonal vegetables, or fresh herbs.
