Instructions
Gather all your ingredients and equipment.
Wash and peel the carrots, then cut them into 1-inch pieces.
Dice the onion and mince the garlic.
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes until translucent.
Add minced garlic and cook for an additional 1-2 minutes.
Add chopped carrots and cook for about 5 minutes.
Sprinkle in cumin, salt, and pepper, stirring well.
Pour in vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes until carrots are tender.
Use an immersion blender to puree the soup until smooth.
Taste and adjust seasoning as necessary.
Ladle into bowls and garnish with yogurt or fresh herbs if desired.
