Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, combine olive oil, salt, black pepper, garlic powder, onion powder, thyme, rosemary, and paprika. Mix well to form a paste.
Pat the chicken dry with paper towels and rub the herb mixture all over the chicken.
Stuff the cavity of the chicken with lemon wedges.
In a large roasting pan, arrange the mixed vegetables around the chicken and drizzle with olive oil, salt, and pepper.
Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
Remove from oven and let it rest for 15-20 minutes before carving.
Serve alongside roasted vegetables and garnish with fresh parsley.
