Equipment

  • Wooden Spoon
  • Mixing Bowl

Ingredients

  • 2 tablespoons chia seeds
  • ½ cup milk any kind
  • 1.5 tablespoons brown sugar
  • ½ teaspoon vanilla extract or almond extract
  • 2 tablespoons smooth peanut butter
  • 1.5 tablespoons unsweetened cocoa powder

Instructions

  • In a mixing jar, combine 2 tablespoons chia seeds and 1.5 tablespoons brown sugar. Stir them together to ensure the sugar is evenly distributed among the seeds.
  • Add ½ cup milk of your choice – whether it's almond, soy, or good old cow's milk. Whisk it well to make sure that the chia seeds absorb the liquid properly.
  • Next, throw in ½ teaspoon vanilla extract and 2 tablespoons smooth peanut butter. If you're feeling adventurous, you can also use almond extract for a twist. Mix until everything is well combined and smooth.
  • Now, it's time to add the chocolate! Sprinkle in 1.5 tablespoons unsweetened cocoa powder and mix again. You'll want to ensure that there are no lumps of cocoa left, so stir vigorously.
  • Once it's all mixed, cover your jar with a lid and place it in the refrigerator. Let it chill overnight. This step is crucial as it allows the chia seeds to expand and thicken the mixture into a pudding-like consistency.
  • In the morning, take your pudding out of the fridge. Stir it well, as some chia seeds might settle at the bottom. If it's too thick for your liking, add a splash more milk to loosen it up.
  • Finally, serve your Chocolate Peanut Butter Chia Pudding in a bowl or glass. You can top it with fresh fruits, a drizzle of extra peanut butter, or a sprinkle of nuts for added texture and flavor.

Notes

This pudding can be stored in an airtight container in the fridge for up to five days.
